The chinese claim that the bitter curd is vital to health. The bitter taste is balancing the other tastes ( sour, pungent, sweet, salty ). Gohyah is included in famous recipes in <a title="Traditional Chinese Medicine" href="http://en.wikipedia.org/wiki/Traditional_Chinese_medicine" target="_blank">TCM</a> Food- or Dietotherapy.</p>
